This week's recipe idea: Lamb & spinach curry



This week's recipe idea is David's homemade lamb and spinach curry. Easy to make and so tasty! 

It'll be on the menu Friday 6th and Saturday 7th October in Cafe Panola.

Serves 4

1kg of diced lamb
1 x tin of chopped tomatoes
2 x onions, diced
1 x small bag of spinach
A little oil
Salt & pepper
1 x lamb or vegetable stock cube
A splash of water
2 x tbsp of curry powder
1 x tbsp of garam masala
1tbsp x cumin
2tbsp of mango chutney
2tbsp of flour

Gently fry the onion in a large pot with the oil, when soft add the spices then the diced lamb. Turn up the heat slightly and seal the meat till brown.

Add the flour, the tomatoes, mango chutney and stock, then season.

Simmer over a low heat for 1-1.5 hrs or till the meat is soft. Just before it is ready add the washed spinach and mix thoroughly.

serve on a bed of fluffy rice with a naan bread on the side.
